Ingredients - 1 cup flour 2 tbsp cornstarch 1/2 cup confectioners sugar 1 cup butter, softened 1 1/3 cups coconut Preparation: Mix the flour, cornstarch, and sugar in a bowl. Blend in the butter until a soft dough is formed. If the dough is too soft to handle, cover and chill for about one hour. Heat oven to 300 F. Shape into 3/4 inch balls. Roll in the coconut. Place 1 1/2 inches apart on ungreased baking sheets. Bake for 20 to 25 minutes or until lightly browned. Yield: about 3 dozen cookies |
